Salmon Casserole

Currently on a bit of a working holiday in Wales and Pete recommended his salmon casserole dish. I’m not a big fan of salmon but this has definitely converted me a bit! It’s a super easy recipe, just a bit lengthy, so prep early if you have a set dinner time.

And of course, it’s naturally gluten free!

Ingredients

new potatoes, halved or third (depending on size)
garlic, finely diced
red onions, quartered
plum cherry tomatoes, halved
green beans
asparagus tips
fresh basil
olive oil
balsamic vinegar
salt and pepper

Method

Oven on 200 (celcius) and add the new potatoes into a casserole dish, and drizzle with olive oil and salt and pepper. Roast for 20 minutes.

Add the garlic and red onion. Cook for a further 10 minutes until the potatoes are nice and brown.

Add the tomatoes and beans and splash the balsamic in. Nestle in the salmon and add a tad of olive oil, salt and pepper. Cook for 15 minutes.

Add the asparagus on top and cook for a further 8-10 minutes.

Sprinkle the basil and serve.
